The benefits of a raw food diet really depend on a number of factors. For many people, though, eating 100 percent raw over the long term can stress digestion and cause weakness.
The basic premise of this type of diet maintains that raw foods in their whole, natural form provide the enzymes necessary for digestion and vibrant health. Raw food enthusiasts claim that cooking destroys these natural enzymes along with many of the other important nutrients in whole, unprocessed food. On the other hand, science has shown that overcooking many foods — especially meats — is unhealthy. Overdone foods contain chemicals such as acrylamide that contribute to inflammation and cancer.
The best cooking methods are light steaming or sautéing without overcooking at high temperatures. Thanks for the interesting and balanced take on this subject. I agree that one size does not fit all, and have seen some people thrive on a raw food diet, while others wither away and seem very spaced out on the same exact diet! It really depends on your individual type — I find that a month or two of raw foods work best for me but anything longer (I tried 100% for as long as four months), and I just didn’t feel like myself until I added some cooked vegetables. Now I am about 70% raw/30% cooked, and have more energy than ever!!

For those seeking only raw, and quoting National Cancer Society…here’s only one simple example of cooked versus raw: Broccoli is not fully digested, and our digestive system can not breakdown the cellular structure and absorb the all important compounds contained within. By thoroughly chewing, you only gain access to around 30% of the nutrients in broccoli. That’s a scientific fact proven in many studies. Research it.
As for the National Cancer Society, do you think they really want to give and support all the answers? They are a foundation that receives grants, donations, and special funding for their existence. If they released all the relevant information, how many of those people making over $100K a year would have jobs (and a lifestyle that involves weekly catered events) ?? They want to help, but they also like their jobs.

As I understand it, all plant life have toxins which can only be neutralized thru cooking. This as per Dr. Michael Savage. Enlighten me. Thank You.
I guess we should be cooking our apples,oranges,lettuce,tomatoes,carrots,pears,cucumbers and a variety of fruits and vegtables that we eat raw every day as they all are plant life.Somehow a cooked salad bar just doesnt sound to appealing.I think your data is way off.True some plants have to be cooked like Polk Salad.
I who have had to experiment with all food to regain my health enjoy eating the lettuce and sometime green peppers, onions, but when it comes to carrots or onion I put them in a blender and mix them up I steam a lot of vegs. I agree It is how you like it. There is a note that if you eat something like a veg or something that was solid you better chew it real good because it will sit in your stomach and intestines and collect bacteria. Chew and Chew. That is why I like to use the blender.
If you suffer from IBS like I do, you cannot afford to eat much veg or fruit. I used to love strawberries but now I have to avoid them like the piague because of these little sharp seeds.

My nutritional plan depends on vegies and fish with fruits. Some vegies R cooked while others R not. I feel excellent in health thru the cardio tough exercise I do daily which is a proof that the fuel ie nutrition I pour in my engine ie body is excellent though am 64 years but actually maybe much much younger accordingly take both cooked and uncooked too
