Garlic Sweet Potato Wedges

- 4 medium sweet potatoes, cut lengthwise into wedges
- ¼ cup olive oil
- 1 teaspoon sea salt
- 4 cloves garlic, finely chopped
- Preheat oven to 400 degrees F.
- Place potato wedges on a baking sheet and toss with 3 tablespoons of the olive oil and the salt.
- Roast until browned, 30 to 40 minutes, turning over halfway through baking time.
- Combine garlic and the remaining olive oil in a small bowl. Brush sweet potatoes with garlic and oil.
- Roast until garlic is cooked, about 3 minutes.
