Garlic Sweet Potato Wedges

  • 4 medium sweet potatoes, cut lengthwise into wedges
  • ¼ cup olive oil
  • 1 teaspoon sea salt
  • 4 cloves garlic, finely chopped
  1. Preheat oven to 400 degrees F.
  2. Place potato wedges on a baking sheet and toss with 3 tablespoons of the olive oil and the salt.
  3. Roast until browned, 30 to 40 minutes, turning over halfway through baking time.
  4. Combine garlic and the remaining olive oil in a small bowl. Brush sweet potatoes with garlic and oil.
  5. Roast until garlic is cooked, about 3 minutes.
