Spinach with Chickpeas
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • ½ onion, diced
  • 1 10-ounce box frozen spinach, thawed and drained well
  • 1 12-ounce can chickpeas, drained and rinsed
  • ½ teaspoon cumin
  • ½ teaspoon salt
  1. Heat the olive oil in a skillet over medium-low heat.
  2. Saute the garlic and onion until translucent, about 5 minutes.
  3. Stir in the remaining ingredients and cook until heated through, stirring constantly.
