Slow Cooker Pork Tenderloin

Ingredients
  • 1 onion, sliced
  • 1 pound pork tenderloin
  • 1 tablespoon all-purpose flour*
  • Sea salt, to taste
  • Pepper, to taste
  • 1 cup pitted dried plums
  • 1 cup chicken broth
  • 1 cup apple juice
Instructions
  1. Place the onions in the slow cooker.
  2. Set the pork tenderloin on top of the onions.
  3. Sprinkle with flour, sea salt and pepper.
  4. Add the prunes.
  5. Pour the broth and juice over the top.
  6. Cover and cook on low for 6-8 hours, until the pork shreds easily with a fork.
  7. Shred the pork and then stir to combine the pork and sauce.
  8. Serve over mashed potatoes.
