Spinach with potatoes

- ¼ cup olive oil
- 4 large garlic cloves, finely chopped
- 1 onion, chopped
- 2 teaspoons cumin powder
- 2 teaspoons coriander powder
- 1 teaspoon red chili powder
- ½ teaspoon turmeric powder
- Sea salt, to taste
- 4 cups of chopped potatoes
- 2 boxes of frozen chopped spinach, defrosted
- 1 cup chicken broth
- Heat oil in a large, deep, nonstick skillet*.
- Saute garlic and onions for 2 minutes.
- Add cumin powder, coriander powder, red chili powder and turmeric powder. Sautee for 1 minute.
- Add potatoes, season with sea salt and saute for a few minutes until the potatoes are partly cooked.
- Stir in spinach and chicken broth, cover and cook for 5 minutes or until potatoes are done and liquid is mostly absorbed.
- Serve as it is for a side dish. Or serve it over a bed of rice for a main dish.
