Overnight breakfast chia pudding
  • 1 cup almond (or coconut) milk
  • ¼ cup chia seeds
  • Pure vanilla extract
  • Honey or maple syrup, to taste
  1. Mix all ingredients together in a mason jar. Cover with lid and refrigerate overnight (at least 8 hours to develop pudding-like texture). In the morning, add your favorite fresh fruit topping or eat as is. If transporting to the office, just make sure the lid is on tight, and don’t forget your spoon.
