Personal portobello pizzas
  • 4 portobello mushroom caps (8 oz total)
  • 1 tsp of breadcrumbs, per pizza
  • 1Ā½ Tbsp marinara sauce, per pizza
  • 1 tsp Parmesan cheese, per pizza
  • Italian seasoning, to taste
  • Garlic powder, to taste
  1. Preheat oven to 425. Clean portobello mushrooms and remove stem and gills (use a spoon to scrape the gills from the underside), dry.
  2. Place Portobello caps gill side down on a baking sheet. You may want to use a paper towel to spread a little olive over the baking sheet first. Bake for 20 minutes.
  3. Turn the Portobello caps over and sprinkle inside with breadcrumbs. Then spread marinara sauce and sprinkle seasonings. Return to oven for 10 to 12 minutes.
  4. Remove from oven to sprinkle each Portobello pizza with cheese. Return to oven till cheese is golden, about 3-4 minutes.
