In the kitchen with Kelley: Mediterranean Watermelon Salad

This salad has something for everyone in my household…

My daughter loves watermelon. My older son is fond of mint. My younger son devours olives. And I am a fan of Vidalia onions.

But the best thing about this salad is that it brings together a few of the staples of the health-saving, heart-healthy and mind-loving Mediterranean diet.

Who would’ve thought that these ingredients would go together so well and be so good for you?

Mediterranean Watermelon Salad

Ingredients
1 Vidalia onion, thinly sliced (can use red onion if you don’t have Vidalia)
1 tablespoon lime juice
1.5 quarts seedless watermelon, cubed
3/4 cup feta cheese, crumbled
1/2 cup pitted Kalamata olives
1/2 cup mint, chopped
2 tablespoons olive oil

Directions
1. In a small bowl, sprinkle lime juice over onion slices. Let stand for at least 15 minutes.
2. In a large bowl, combine watermelon, feta cheese, Kalamata olives, onions with the lime juice and mint. Drizzle with olive oil and toss gently to blend.
