In the kitchen with Kelley: Slow Cooker Caramelized Onions

Caramelized onions are simply delicious, but who has time to fix them — especially on a busy weeknight? Here’s a solution: Cook them in your slow cooker. It’s so simple. And caramelized onions are freezable, too. So you can fix a big batch, spoon some onto burgers or sandwiches or whatever for dinner and freeze the rest in portion-sized freezable bags or containers.

Slow Cooker Caramelized Onions

Ingredients

3 to 5 pounds onions, peeled and cut into thin slices
3 tablespoons extra-virgin olive oil
½ teaspoon Sea Salt

Directions

1. Place onions in the slow cooker, filling it three-quarters of the way full.
2. Drizzle olive oil and salt over the onions and toss to coat evenly.
3. Cook on low for 12 to 14 hours.
