It’s not really a vegetable, but most of us eat foods cooked in its oil. And researchers find it can damage the digestive tract leading to bowel problems and possibly, in the long run, cancer.
Lab research in Japan shows that corn oil can cause inflammation in the gut and that people with gluten sensitivities may be especially vulnerable.
A report by the Gluten Free Society notes that in this research: “[C]orn oil increased villous atrophy, and also caused an increased production of inflammatory chemicals. One of the mechanisms suspected as the cause is the high level of omega 6 fatty acids found in corn oils.”
The report also warns that restaurants frequently cook with corn oil and oil from GMO soybeans.
