Lab tests by researchers at University of California in Santa Barbara (reported in Diabetes Care) show that cinnamon increases sugar metabolism in fat cells 20-fold. Researchers have also discovered that less than one-half teaspoon of cinnamon daily for 40 days — sprinkled or prepared in food — significantly dropped blood sugar levels in 60 study participants with Type 2 diabetes.

Ceylon cinnamon is purer than cassia cinnamon, which contains high doses of a toxic compound called coumarin. Couramin can take a toll on your liver and kidneys if you eat a lot of it.
