2. Defeat Diabetes
Carotenoids are also potent antioxidants — and that activity may be behind a study that shows increasing intakes of beta-carotene and alpha-carotene could reduce type 2 diabetes risk as much as 22 percent.
In the study, participants were followed for 10 years and consumed an average of 10mg of carotenoids a day. You can get about that much by eating one to two medium sized carrots a day. Carrots are the best source of beta-carotene.
